For a little extra comfort in your life, there's nothing like a hearty, down home meal. My wife made this Dutch Oven Chicken a few days ago. She uses a real Dutch Oven made with thick cast iron, not a thin wall enameled pot. Those are "French Ovens", often mistakenly called Dutch Ovens. She slow roasts the chicken two to three hours. Slow roasted tender whole chicken smothered with delicious juices, the perfect blend of savory spices, and a bit of sweetness from the carrots make this a perfect meal on a cold winter day. A warm, cozy fire burning in the wood stove with cooking smells and just a hint of wood smoke in the air. Relaxing and chatting at the table with friends and a meal like this is like going back in time to Grandma’s house on a Sunday afternoon.
